Welcome to the first installment of a long and unstoppable flow of vegetables!

For those who are new to eating with the seasons, you will find that the first month or so is heavy on the salad ingredients and light on the casserole recipes. It is only the beginning of June--these plants have only had two months to grow--so there are mostly leafy greens and fast-growing crops. This spring was a strange one, with hot, dry stretches and chilly, windy weeks. The plants just hunkered down and grew slowly and steadily.
We recommend washing your leafy greens as soon as you can so that you will have no obstacles to getting them to your plate. Veteran CSA customers process their vegetables as soon as they get them, before putting them in the refrigerator. Everyone is short on time, especially right before dinner, and you want to increase the possibility that you will eat these tender greens before they fade. It is the worst feeling to find that you have wasted your vegetables, letting them languish in the bottom drawer of the fridge because you didn't have the time to deal with washing and chopping.
This week on the farm we are re-learning all the systems and set ups that will make the CSA a smooth-running machine. There will be some hiccups, but we managed to learn it all last year so this year should be a breeze. It is kind of like Halloween every week, putting goodies into bags, except that it is lettuce and kale instead of M&Ms.
