As we get ready for the holiday week, please remember that if you are out of town, you can put your CSA on hold. We have plenty for you to choose from for the coming week to plan your holiday meals.
Josh is in the holiday spirit and has dug up red, white, and blue potatoes for this week. As the summer continues, the choices are evolving, but there will always be a bounty to choose from.
This week, let's highlight summer squash. Here's how to store and prep it:
How to Store Summer Squash:
- Keep summer squash in a plastic bag in the refrigerator.
- It will stay fresh for up to a week.
How to Prep Summer Squash:
- Rinse under cool running water.
- Cut off the ends.
- Slice or chop as needed for your recipes.
Recipes to Try:

Grilled Summer Squash
- Slice squash into rounds.
- Brush with olive oil and sprinkle with salt and pepper.
- Grill over medium heat for 3-4 minutes per side.

Summer Squash Salad
- Thinly slice squash and toss with cherry tomatoes, fresh basil, and feta cheese.
- Drizzle with olive oil and balsamic vinegar.

Stuffed Summer Squash
- Hollow out squash and fill with a mixture of cooked quinoa, chopped tomatoes, and herbs.
- Bake at 375°F for 20-25 minutes until tender.
