Greetings from the farm,
I hope you all are doing well. As I sit down to write this, we’re finally receiving some much-needed rain, and we couldn’t be more grateful! ?️ This rain is a blessing for our fall crops and the pasture fields. It’s going to make a huge difference as we move deeper into the fall season.
Things are in full swing here on the farm. We’ve started pulling bins of pumpkins out of the field, and the place is starting to look like autumn! ? We’ve also had an extra busy week as we began supplying the Winchester Farm Exchange. Adding another market has been a bit of an adjustment, as we work out the logistics of picking, packing, and meeting the demand, but we’re getting there! There are still a few bumps to iron out, but we’re on the right track.
In addition to all that, we’ve picked up another batch of chicken from the processor, so there will be some added to the farmstand menu this week. ? If you’re a fan of our chicken, now’s a good time to stock up!
As far as vegetables go, we’re excited to share that cauliflower and broccoli are making a comeback. While we don’t have a ton ready yet, there will be some available at the store for those who have been waiting for these fall favorites.
This week, we want to highlight a special winter squash: Autumn Frost Winter Squash! ? Here’s a bit more information about it:
Autumn Frost Winter Squash:
Description: Autumn Frost is a beautiful, frost-tolerant winter squash with a smooth, tan skin and rich, sweet orange flesh. It’s similar in flavor to a butternut squash, but has a slightly more caramelized, nutty taste when roasted. It’s not only delicious but also has a great shelf life!
How to Store:
- Whole Squash: Store in a cool, dry place. It can last for up to 3 months when stored properly.
- Cut Squash: Once cut, wrap it tightly and store it in the refrigerator for up to 5 days.
How to Prep:
- Peel the skin with a vegetable peeler if desired, or leave it on for roasting.
- Cut the squash in half and scoop out the seeds.
- Cube or slice for your recipe of choice.
Three Delicious Recipe Ideas:
- Roasted Autumn Frost Squash with Sage Butter: Cube the squash, toss with olive oil, salt, and pepper, and roast until tender. Drizzle with a sage-infused butter for a perfect fall side dish.
- Autumn Frost Squash Soup: Blend roasted squash with vegetable broth, a splash of cream, and your favorite fall spices like cinnamon and nutmeg for a cozy, warming soup.
- Autumn Frost Squash Salad: Roast the squash and toss with mixed greens, goat cheese, dried cranberries, and a balsamic glaze for a hearty fall salad.
We hope you’re as excited for the fall season as we are! Have a fantastic week, and don’t forget to check out the Autumn Frost squash and all the other fresh produce we have available.
Take care,
The Schultz Family ?
