The first of the cauliflower and beans are ready this week, and more coming next week. The cabbages are filling out too. We have several different varieties. There's lots of the small, sweet summer cabbage this week. They are great for fresh eating or making sauerkraut. Then there's the larger Copenhagen cabbage, which are often used for sauerkraut. In a week or two the big flat head cabbages will be ready, they're the best for cabbage rolls with their large, flat leaves. And then there's purple cabbage and, later in the season, storage cabbage that will store into winter.
