Squash season is here! While it hasn’t been a great year for some varieties, others are thriving in the fields. This week, we’re shining the spotlight on bora bora squash. Our friends and fellow farmers over at Plainville Farm, which supplies butternut squash for Big Y supermarket locations throughout the region, are trying to get the word out about this delicious and under-appreciated variety.
Originating in Brazil and a staple in kitchens throughout Central and South America as well as across Asia, bora bora squash is drier, denser, and has a longer shelf life than most of its relatives in the cucurbitaceae family. This variety has dark green skin like that of buttercup squash, and it has a hard, bumpy shell resembling a ribbed pumpkin. Bora bora squash is an excellent substitute for butternut and other varieties in soups and stews, and its natural sweetness (like that of kabocha) means that it can stand alone without the need for adding maple syrup or other sweeteners.
