We are little late to getting our delivery email out to members this week! Where did the weekend go?! Time is flying these days, as are the weeds! This is the time of year where we are just getting into full harvest, the weeds are growing faster than crops (ahem...carrots...) and we still are doing a lot of planting/transplanting. That is all to say that it is busy!
Its going to be another good week for the box with some new crops making an appearance like carrots, summer squash, garlic scapes and fennel (I know, its not a common one, but actually has a lot of uses- think marinara!!!)
Our little piggies arrived this weekend and they are getting settled in nicely. The cows are moved every couple days to new pasture and we had a surprise calf last week! We are low on chicken inventory but will be stocked up in about a month with our new batch going to butcher.

Here is what you might see in your box this week:
Carrots Bunch- yay carrots! Carrots are like gold for us farmers. They are hard to germinate, getting overtaken by weeds, take forever and than are time consuming to harvest and wash. To many, a carrot is a carrot, but these carrots are a labor of love! And they are SWEET!!! Wash a again and eat raw! You can make pesto out of the greens, too. Top the carrots soon, so they do not go soft and keep them in a container or plastic bag.
Scallions- A great addition to many a dish- cooked or raw. Keeps well in a container in the fridge.
Kohlrabi- Apparently, we are having a great kohrabi year! Some of them are the size of a babies head! They are really a great snack for kids, tho. PEEL THEM! and then slice or matchstick them and dip them in your favorite dip. They keep very well if not peeled, too.

Head Lettuce (2)- We have a lot of lettuce in the field because I promised myself this would be my year for head lettuce, which usually I do not prioritize and therefore do not have quite enough of. And as it turns out, of you keep planting head lettuce you keep getting lots of head lettuce! you will get 2 heads, a mix of either red butterhead, red frilly oscarde, romaine and/or green leaf. WASH BEFORE YOU EAT!
Fennel 1 or 2- Fennel is a bit of a hidden gem we think! It has a really nice anise flavor that goes so well with italian sausage, pasta sauces, etc. It can also blend into a stir fry really well. Once cooked, it is not overpowering at all. TRY IT!! You can chop the fronds into salads for a fresh herby taste, too. Use the whole thing!
Salad Turnips-This will be our last salad turnips until the fall. Its been a rough go for our radishes and turnips this spring. Can't win them all! (when you grow over 60 crops!)But these ones turned out nice, but a little small. More tender! And don't for get the use the greens- braise them, stir fry them, cook them into eggs, etc...
Spinach- We ended up with a beautiful, of slow to grow, spinach bed in late June! but hey, its never a wrong time to have a power packed nutrient dense green, right? Prewashed, but it never huts to wash again.
Napa Cabbage- Now thiis napa is nice! Of course, I'm going to reccomend you make a batch of kimchi (with carrots and turnips no less?!) But you can also make it into a slaw or just cook it up! Enjoy!
Cabbage Slaw with Ginger Tahini Dressing
Cilantro- I know we have given you a lot of cilantro, but we have it out there and it looks so good! Super great in a Peanut Dressing/Tahini Dressing Napa Slaw!
Garlic Scapes- Ooooh, these are a treat! A mild garlic flavor crispy, juicy and tender. We really like these cooked up in scrambled eggs. Yesterday I cooked them with ground pork and beef for some tsaty tacos.
Summer Squash- First harvest of the year! Looks like everyone will get 1 or 2. More to come! Summer Squash is so fres hand awesome when it is diced up small or sliced and cooked at high heat with garlic or onions and topped with fresh herbs and a little parmesan.
Snap Peas- We think this was our last picking. They came on strong and are going out just as strong- such is the life of a pea.

We had a surprise fresh calf, but mom left it in the heat last week so we cooled it off and brought it back. Its up and running around now! Willem washed him with a cool cloth.
