Jerusalem Artichokes

This week, we harvested some Jerusalem Artichokes. This was brand new for me, so I enjoyed learning a new experience. We spent all day Monday harvesting and cleaning the Jerusalem Artichokes. I was told "it's like a potato". Oters mentioned but has a buttery taste much like artichokes. I had to try this. I steamed them with onions. They were much softer than potatoes and tasted like potatoes. I didn't identify artichokes with them. I also left the peeling kn which stayed crunchy and had a sweet flavor to it.
