Week 7
After the long 8 month growing season of garlic, we are happy to have it all harvested, just 2 to 3 more weeks until it will be shelf stable and ready. The weather over the last couple weeks of growing this crop were quite perfect for finishing it off in the field (we are typically hoping for dry weather). About 2 weeks before harvest, we shut off the irrigation for garlic and this helps to initiate the drying process. When those roughly 2 weeks are up, we use an implement attached to a tractor to glide under the soil and garlic, lifting it up and loosening the roots so that it can easily be picked up from the field. Once all the garlic is collected from the field, we lay it out in the greenhouse where it needs warm temperatures and low relative humidity to "cure" and become the shelf stable garlic that we are familiar with.
