Another box of delicious fruit and vegetables awaits you this week as we move into September! Apples and potatoes are still in large quantity and a few of you will see the first harvests of collard greens this week. If these large brassica leaves catch you off guard here is a traditional southern recipe for braising them. And if your feeling more adventurous you can ditch your tortilla wraps and opt for a collard wrap!
While I'm here I would also like to discuss the humble beet. This member of the Goosefoot family grows incredibly well in our soil which is the main reason why they've been a staple in shares for many weeks now. For those of you who are weeping internally when you see a bunch of beets appear on your weekly Harvie list, fear not! Beets are an incredible super food full of betalains that fight inflammation, help regulate blood pressure and assist liver detoxification. They are also rich in dietary nitrates which your body converts into nitric oxide, a gas beneficial for heart health and increasing physical performance. If that hasn't already convinced you to bite directly into a raw beetroot, their greens are also edible and some of the most nutrient dense around! Check your crop talk email for some foolproof and mouthwatering ways to prepare these sweet beets!
