Looking for some meal inspo?  Here is one of our favourite quick and easy weeknight meal ideas:

Garlic and Lemon Collard Greens Pasta

Ingredients:
- One pack of chiffonade cut collards, thawed
- ~1/2 c pine nuts
- One lg clove of garlic
- ~1/2 tsp chili flakes
- Zest and juice from one lemon
- One pack (500g) spaghetti
- Olive oil
- Parmesan
- Salt and pepper

Directions:
1. Cook noodles in a large pot of water until al dente
2. While they are cooking, heat enough olive oil to coat bottom of pan over medium heat
3. Add pine nuts and gently toast then add garlic and chili flakes and cook briefly before adding collards
4. Season with salt and pepper and gently stir/toss to heat through and mix together, allowing to take on a bit of browning at the edges but stop cooking while colour is still bright green
5. Set aside then toss with pasta, adding a bit of pasta water and / or olive oil if needed so that everything mixes well and does not stick together
6. Add lemon juice and zest, mix then plate and top with Parmesan cheese
