Hello! My name is Randi Marchezak, and I'm the third generation on our small, family dairy farm, Twin Brook Dairy Co. in Bentleyville, PA. Pictured is the farmer in charge--my dad John. After spending some of my early adulthood years away from the farm, this past year I returned to the family business to do the bottling, marketing, delivering, selling etc.
 
My grandfather started the farm in 1952 with big dreams and a rare breed called Guernseys (over the years we've added Holsteins and Jerseys). We've been raising and caring for beautiful cows ever since. In April 2020 we started bottling our milk ourselves and making it available directly to the community. In taking this leap, our goal is to be able to continue farming well into the future. We know that depends on folks like you that choose to support their local farmers. We are BEYOND appreciative!
 
Our milk is special and unique because of our rare, heritage breed cows (their milk is higher in butterfat and beta carotene--flavor!) and the way we care for them (more nutrients and flavor in the milk). They're outside on pasture every day of their lives from the time they're born, and we feed them the highest quality hay and feeds that we grow ourselves.
 
Our milk is not homogenized - which means we're not processing and manipulating the fat particles (some folks who normally have issues digesting milk find that they can easily enjoy ours). We also use a process called vat pasteurization. By using this option, we can better maintain the flavor, natural enzymes, vitamins and minerals by heating it to the lowest legal temperature allowed by law. We want our milk to be as natural as possible! Have you tried our cream-top whole or chocolate milk? We hope you will!

Bread Add-On Share: Red Fife Sourdough. The bread has a wonderful nutty, slightly sweet flavor that works well in many settings. Red Fife Batard is made using organic heritage red fife grain grown on Mediterra's own land in Arizona. The entire milling process is done in-house using traditional stone-ground milling equipment. Natural levain (sourdough) starter is added, giving this loaf a subtle, tangy bite. Use it in place of a traditional sourdough bread, paired with your favorite meats and cheeses, or simply toast and enjoy.
