Bread of the Week: Mediterra Bakehouses's Sprouted Spelt
The Sprouted Spelt is a new spin on an old classic. To create this loaf, we took our famous Mt. Athos and added spelt berries (sprouted in-house) throughout. The process of sprouting partially breaks down the starch in the grain, which aids in digestion. Sprouting also decreases the carbohydrate content and increases fiber content. This loaf is made with the same germ-restored wheat we use for our Mt. Athos, which provides a delicious wheat aroma and a nutty, earthy flavor. Our Sprouted Spelt bread is topped with flax and millet before baking for added health benefits, making it one of our most hearty loaves.

Has COVID-19 changed the way we eat?
COVID-19 has touched our lives, society, and families in innumerable ways. We've all changed so much about our day-to-day in the past year and are wondering which changes will stay with us when we go back to "normal". Harvie has been asking those questions too. What will the new normal look like? How can we all work together to build a strong, resilient food system where we can buy food from people we know and trust?
We decided to find out how you see the future of food for your family. In January we launched an online survey with more than 2,000 responses. Consumers reported higher interest in supporting local farmers, cooking at home, and having their groceries delivered to their house.
Results:
- 76.5% have an increased desire to support local farmers and suppliers into the future
- 80% of survey respondents are cooking at home more since the pandemic started
- 60% intend to continue to cook at home more
- 58% have an increased interest in home-delivered groceries
Harvie CEO, Simon Huntley sees these results as a pivotal moment in the movement to change the way the world eats and build more resilient food systems. "The pandemic has shown us all the value of community, caring for our neighbor, and staying healthy," says Huntley. "This has accelerated shifts in the ways families are sourcing their food. And now it's up to farmers, producers, and small businesses to harness this momentum to give consumers what they want and create lasting change in our food system."
