eggplant ideas

The beautiful eggplant! We grow Italian eggplants (the big ones) and Asian varieties (long and skinny). You will have weeks to explore eggplant dishes. I love eggplant slices marinated in olive oil and spices, then grilled. Babaganouj is a delicious dip, like hummus with roasted eggplant instead of chickpeas. I use a recipe from the original Moosewood Cookbook. what's growing on

The August weeks are often hot and buggy and bountiful. We are rolling in the heat-loving crops--summer squash, cucumbers, peppers, eggplant, tomatoes. Onions and garlic to go with everything. We have some chard and kale for the greens lovers. We still have beautiful cabbages for your summer slaw. We are planning to dig potatoes. The sweet potatoes and butternut squash are looking good for the fall harvest, becoming a sea of vines in the field. U-Pick cherry tomatoes and flowers are bountiful! Enjoy the bounty of summertime on the farm.

We are planning to dig the Kennebec white potatoes these next two weeks. It's like treasure hunting! We will try to dig some during CSA pickup days, so check in with me by text or when you arrive. See what we are up to when you pick up, you can help dig taters for a few minutes or an hour or just check out what it's like to dig potatoes.
