Tulsi turned 3 last week! It was a great day. She got a blue ukulele from us and helped make her chocolate cake. I can't help putting something healthy in a baked good if I think it won't totally ruin the treat of it (beet cake is a great example, you can't even taste the beets!), so a few years ago I made up a recipe for dark chocolate eggplant cake. You'd never know there's roasted eggplant in it!
Here's the recipe:
I use a lb. of roasted eggplant. Combine that with 2 eggs, 1 tsp vanilla, 1/2 cup sugar, 1/2 cup maple syrup, 6 oz melted bittersweet chocolate, 1/4 cup melted butter (or coconut oil) in blender. Add that to dry ingredients: 1 cup flour, 1 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, 1/2 tsp cinnamon. I just made the recipe up but its turned out great each time i've made it! I like to decorate with sliced figs and flowers. Best served with whipped cream or ice cream to make it more of a treat :)
