Welcome to the third week of the CSA season! Summer crops are just around the corner so this should be our last week that is very heavy on greens. If you are looking for some color on your plate try a roasted beet salad with a bunch of beets and either spinach or lettuce. We like to chop beets up into small bites and roast them until they are tender and then toss them on a salad with goat cheese and balsamic vinaigrette. Also new to the list this week is broccoli and kohlrabi.
