We have a great week ahead of us! This week will feature the first round of sweet corn along with eggplant and peppers. We have two varieties of eggplant this week. Italian eggplant is the larger variety and is great for slicing into steaks for eggplant parmesan. Japanese eggplant is long and skinny and is great in a sauté or ratatouille - it has more skin to flesh so it has a nice texture when you chop it up and sauté it. We also have purple bell peppers on the list this week. These peppers are sweet and tender and are great raw on salad or served with hummus or dip. You can cook purple peppers but they will lose their deep purple color as soon as they get hot.
