If you have not made a roasted root medley this winter, it's time. It is so easy and so good!
Just wash your roots (beets, carrots, sweet potatoes, turnips, etc). No need to peel in my opinion and use whatever roots you have. You can also dice up butternut squash (after peeling) to add to it. Cut into 1 inch pieces roughly, dump on a roasting pan, drizzle with olive oil and sprinkle with your favorite Briny Sea salt blend and other spices.
Then spread out and roast at 350 degrees until soft. You can serve alone or on top of a grain. Also fun to melt some cheese on it the last few minutes of roasting.
Those winter roots are so sweet due to the cold weather! Enjoy!
