Exciting Updates from Schultz Valley Farms! ??

Posted on May 24th, 2024 by Lynne Schultz

Dear CSA Family,

I hope this email finds you all in good health and high spirits. As we gear up for the holiday weekend, I wanted to take a moment to share some exciting updates from the farm.

It's been a bustling week here at Schultz Valley Farms, with the weather finally cooperating in our favor. The recent spell of dry weather has been a boon for us, allowing us to make significant progress on various tasks around the farm.

One of the major highlights of the week was completing our first hay harvest of the season. It's always a relief to have that checked off our to-do list, especially with the unpredictability of weather patterns.

In addition to the hay harvest, we've been busy planting our next round of crops. We're thrilled to announce that sweet corn, watermelon plants, and field tomatoes are now nestled snugly in the soil, soaking up the sun and nutrients they need to thrive.

But wait, there's more! We're excited to introduce some new arrivals to our vegetable lineup. Fresh carrots and broccolini have made their debut, adding a burst of color and flavor to our fields. We can't wait for you to taste these delicious additions in your upcoming CSA baskets.

Now, let's talk strawberries! We're pleased to announce that our first Strawberry U-Pick event of the season will take place on Saturday, May 25th, from 4:00 pm to 7:00 pm. It's your chance to join us on the farm and indulge in the sweetest, juiciest berries straight from the vine. We hope to see you there!

This week, we're shining the spotlight on one of our favorite vegetables—beets! Here are some tips on how to store and prep beets:

- Storage: Remove the beet greens, leaving about an inch of the stem attached, and store them separately in a plastic bag in the refrigerator. Beets themselves can be stored in a cool, dark place for up to two weeks.

- Preparation: Scrub the beets thoroughly under cold water to remove any dirt. Trim off the tops and roots, then peel the skin using a vegetable peeler or knife. Beets can be sliced, diced, or grated depending on your recipe.

And now, for some delectable beet recipes to inspire your culinary adventures:

1. Roasted Beet and Goat Cheese Salad
2. Beet and Lentil Soup
3. Beet Hummus with Pita Chips
4. Balsamic Glazed Beets
5. Beet, Apple, and Walnut Salad
6. Beetroot Risotto
7. Beet Chocolate Cake (Yes, you read that right!)

As we head into the holiday weekend, I want to wish each and every one of you a safe and enjoyable time. Whether you're spending it with loved ones, enjoying the outdoors, or simply taking some well-deserved rest, I hope it's filled with joy and happiness.

Take care, stay safe, and see you at the Strawberry U-Pick!

Warm regards,

Farmer Josh
