I hope this email finds you well and enjoying the beautiful spring weather. It's been a bustling week here at Schultz Valley Farms, with the arrival of some exciting new crops and the transition from spring to summer produce.

As we enter this wonderful time of the year when spring crops and summer crops overlap, our fields are bursting with an abundance of fresh, vibrant produce. We're thrilled to announce that this week marks the debut of one of our most anticipated summer crops—tomatoes! Get ready to savor the first taste of juicy, sun-ripened tomatoes straight from the vine.

But that's not all! This week, we're shining the spotlight on another farm favorite—beets! These vibrant root vegetables are not only delicious but also incredibly versatile. Here's how to store and prep them for cooking:

- Storage: Remove the beet greens, leaving about an inch of the stem attached, and store them separately in a plastic bag in the refrigerator. Beets themselves can be stored in a cool, dark place for up to two weeks.

- Preparation: Scrub the beets thoroughly under cold water to remove any dirt. Trim off the tops and roots, then peel the skin using a vegetable peeler or knife. Beets can be sliced, diced, or grated depending on your recipe.

And now, for some mouthwatering beet recipes to inspire your culinary creativity:

1. Roasted Beet and Goat Cheese Salad: Toss roasted beets with fresh greens, crumbled goat cheese, toasted walnuts, and a drizzle of balsamic vinaigrette for a delightful salad that's bursting with flavor.
