Weekly CSA Update: Busy Days on the Farm & Fresh Produce Highlights

Posted on June 7th, 2024 by Lynne Schultz

Greetings CSA Members,

I hope you are all doing well!

We’ve been incredibly busy on the farm with this stretch of dry weather. We’re focused on working on hay, aiming to have it done by Father's Day. On the produce end, we have more plastic to lay and additional crops to get in the field, but we’re confident everything will be done in the next week.

Greenhouse Update: Our greenhouse still has plenty of flowers and vegetable plants available. If you’re looking for anything, our hours are:

  • Saturday: 2pm to 4pm
  • Closed Sunday
  • Weekdays: 10am to 6pm

Additionally, if you run out of something during the week, our farmstand is open, so you can always pick something up during the day.

Fresh Fruits and Vegetables: We have so much getting ready, including our blueberries, and I’m excited to share that we’ve been able to get some red raspberries from my sister’s farm. So, there is some fruit available this week!

This Week's Featured Vegetable: Green Onions Here are some tips on how to store and prep green onions, along with five delicious recipes to try:

Storage Tips:

  • Refrigeration: Store green onions in the refrigerator. Place them in a jar with about an inch of water at the bottom and cover loosely with a plastic bag.
  • Freezing: You can also chop green onions and freeze them in an airtight container for future use.

Preparation Tips:

  • Washing: Rinse green onions thoroughly under cold water to remove any dirt.
  • Trimming: Trim off the root ends and any wilted green parts.
  • Chopping: Slice the white and green parts according to your recipe needs.

5 Recipes Using Green Onions:

  1. Green Onion Pancakes: A savory, crispy treat perfect for breakfast or as a snack.
  2. Stir-Fried Green Beans with Green Onions: A quick and tasty side dish.
  3. Green Onion and Cheese Omelette: Start your day with a flavorful breakfast.
  4. Asian Noodle Salad with Green Onions: A refreshing and vibrant salad.
  5. Loaded Baked Potatoes with Green Onions: Top your baked potatoes with sour cream, cheese, and chopped green onions for a delicious meal.

We hope you enjoy the bounty of fresh produce coming your way this week. Have a great week, and we look forward to seeing you soon!

Best regards,

The Schultz Family
