Greetings from the farm!
Can you believe that it’s already the end of August? Time sure flies, but we’ve had an eventful week here at the farm!
This week, we celebrated Josh’s birthday ? and had some exciting sports news to share—Sadie’s soccer team won both of their games this week! ? On Saturday, she’ll be running in her first cross-country meet of the season, and we’re all cheering her on.
I have to give a big shout-out to my two boys who have really stepped up this week. They’ve been a huge help not only on the farm but also with our market responsibilities. With school sports in full swing, it’s heartwarming to see them manage it all so well.
As we start to enjoy some cooler temperatures, I’m thrilled to share that a bunch of greens are coming back in! ? We’ve also got plenty of winter squash starting to come in, and this week we’re featuring acorn squash. ?
Acorn Squash Tips:
- How to Prep: Acorn squash is incredibly versatile. You can bake it, roast it, or even stuff it! Simply cut it in half, scoop out the seeds, and it’s ready to go. Don’t forget, you can save the seeds to roast for a tasty snack.
- How to Store: Store acorn squash in a cool, dry place, and it should last for several weeks. Avoid refrigeration as it can affect the flavor and texture.
Three Delicious Recipes:
- Maple-Roasted Acorn Squash: Slice the squash into wedges, drizzle with maple syrup and a touch of olive oil, and roast until caramelized. Perfect for a cozy side dish.
- Stuffed Acorn Squash: Fill each half with a savory mixture of quinoa, cranberries, pecans, and sage for a satisfying main dish.
- Acorn Squash Soup: Puree roasted squash with onions, garlic, and a bit of cream for a rich, comforting soup. Add a sprinkle of nutmeg for a warm finish.
Important Update: For those who pick up at Preston Farms, please note the new location for pick-up will now be at the Canal Winchester Farm Exchange. Starting this week, pick-up will begin there at 3 PM.
