Standing amongst the vegetables at the peak of the season the eye can behold every color of the rainbow. When we have the pleasure of eating from this vegetable rainbow our diet is literally glowing with sunny shades of every hue, (from the palest creamy yellow to the deepest indigo blue)! If you want to shake things up a bit, try to eat a vegetable from the whole spectrum in a single day. Some colors are easy like popping an orange cherry tomato, but if you've been wondering to do with those eggplants, then now's your chance to go purple and try your hand at some Eggplant Caponata! Just think of all the good things that eating colorfully can do for our bodies . . . can sunny tomatoes bring about a sunny disposition? You bet they can! Eat well and be well. All we have to do is pick up an ear of corn and start counting colors. Your share will give you lots of options this week, so dig in!

About the farm
Boerson Farm is a 69 acre diversified family farm in rural Green Lake County, located 30 minutes southwest of Oshkosh. We are USDA Certified Organic and grow over 60 varieties of vegetables. We also rotationally graze our grass fed beef herd of Red Devon cows, maintain a flock of laying hens for pasture raised chicken eggs, and work together with a local bee-keeper to manage a modest apiary. We've been dedicated to growing for our local community since 2008 and are committed to providing the highest quality produce, beef, eggs and honey possible using ecologically friendly practices.
