EGGPLANT!

The beautiful eggplants! We grow Italian eggplants (the big ones) and Asian varieties (long and skinny). You will have weeks to explore eggplant dishes. I love eggplant slices marinated in olive oil and spices, then grilled. Babaganouj is a delicious dip, like hummus with roasted eggplant instead of chickpeas. I use a recipe from the original Moosewood Cookbook. I found someone’s blog that includes a photo from the cookbook, so you can see the recipe

WHAT'S GROWING ON

Happy summer! Peak U-Pick time! The Bean Hut is open, providing shade and bean picking for kids and adults at all reaching levels! Pick green beans at the U-Pick Row. Enjoy cherry tomatoes in Candy Lane. Zinnias are blooming in beautiful colors--walk down the flower row past the spring flowers for these fresh summer blooms. Squash and cucumbers continue to grow rapidly. We pick them 3-4 days per week. So many choices of harvest items right now. If you want more than your allotment, just order extras and you will be billed. It’s a great deal. Especially on extra boxes of tomatoes. Check the extras!

PESTO

We are growing some lovely basil! Our bag should have about 3 cups of basil, perfect for a batch of pesto:

My tip is to use walnuts instead of pine nuts! Delicious and MUCH less expensive. Pesto freezes well!
