We have started harvesting beautiful Beatrice eggplants! Baba Ganoush dip, eggplant parmesan, stir fry, and grilled rounds added to a hamburger are some of my favorite ways to use them. Also ready this week is cucumbers, one of my favorite summer vegetables! Im sad to say the tomatoes are ripening at a snails pace and we will only have a few again this week. The delayed ripening is probably due to the shade cloth that we put over the high tunnels to keep them cooler. So hang in there we will have some soon.
