WHAT'S LEFT OF YOUR SHARE?

On Tuesdays I'm going to post this question on Facebook and Instagram. 

Whoever responds first will get strategies and recipes to deal with the left over veggies quickly before you recieve your next share. I'll post them for everyone. 

I'm truly excited about assisting members this way and seeing the challenge of what combinations go veggies you have left each week.  

Last week Maria requested more eggplant recipes. That's a great place to start so I'll give you some ideas here.

Try the Classics: These classic eggplant dishes like ratatouille or eggplant parmesan are delicious. You should make them at least once every year. They are also great for batch cooking and freezing.

Batch Cooking & Freezing: Take your favorite eggplant dish and tripe or quadruple it. Assemble it, cook it until just before done, and then freeze. I love to bake several round, globe eggplant at a time and make a large batch of baba ghanouj to freeze. When frozen in 2 cup portions, it make a great snack dip for taking to a party or just a side for a meal or a snack at home.

Grilled or Broiled Eggplant: Grill or Broil your eggplant for this salad, Grilled Eggplant salad or this Bruschetta with eggplant. Or just grill/broil the slices and put in a freezer bag. You can pull these slices out later to make eggplant parm in the winter.

What Will You Do When The CSA Ends?

There are only 6 more weeks of our 20 week CSA season.  If that makes you sad, I have great news.  

The Fall Extended Share that we've offered in past years is becoming a 10 share, every other week Winter Share that will keep organically grown farm fresh vegetables coming to you from October to February.

There will only be 100 shares available from our farm so start thinking about it now. More details coming soon.
