You'll see 'Winter Kale' on the share list this week, and it should hang around for a couple of weeks. This kale is by the pound and it's from the field, so it's extra sweet. It has been through lots of frosts at this point in the winter, so you'll notice the leaves are a bit yellow around the edges. It's delicious and perfect for adding to soups, sautes, or any way you typically use kale!
We also recommend using the kale quickly - don't let it sit in your fridge for very long. Adding lemon or vinegar to your salad dressing is a great way to break down the kale leaves in a winter salad.
Winter Kale Salad and Lemon-Dijon Dressing
It's always exciting to add a new tool to our farming systems, especially when it means saving lots of time and energy! This season we're adding a vacuum seeder to our array, which should save hours in seeding labor. Vacuum seeders make it possible to seed whole trays at once, while we have been seeding trays by hand (one seed at a time) for years. They're also surprisingly accurate - the mechanized motion deposits seeds directly in cell centers for uniform root growth.
