Greetings from Fresh Start Farms!
Spring is ramping up and Fresh Start Farmers are starting to harvest! This week you'll see Sylvain's chives, oregano, scallions, mustard greens and leeks as well as spinach, parsley, and celery from Isha and Sidi. Also, get ready for spring specialties - fiddleheads and ramps! They have very short seasons, so enjoy them while they last!

Partner Farm Spotlight
This week, you'll see onions, potatoes, and carrots from Dagele Brothers. Located in New York, Dagele Brothers is operated by Frank, Robert, and Randele Dagele. The farm started in 1919 by the brothers' grandparents, John and Josephine, who emigrated from Poland and settled on the 22 square miles of Orange County known as the "Black Dirt" region. This area is home to some of this country's most fertile soil and the sulfur and nitrogen-rich black soil was uncovered when German, Polish and Dutch immigrants drained the bogs and ditches in the area. The high sulfur content in the soil produces some of the spiciest onions available and for the past 100 years, the region has been known for its flavorful alliums. Today the 400-acre farm devotes about 180 acres to onions.

The outside of the Food Hub got a makeover last week and the new window decals now reflect a bright and lively space. We can't wait to welcome the community on our opening day, June 5th!

Recipe of the Week
Ramps are a wild plant that are among the first green things to pop out of the ground in the spring, and while they're related to leeks and shallots, they're prized for their unique flavor more pungent than both of those. 

Ramp and Mushroom Tart

Add ramps, Dunk's mixed mushrooms, Vermont Creamery goat cheese, and Maple Meadow eggs to your share this week, and enjoy an extra special spring tart!

New Protein!
