Greetings from Bluemont. Welcome to CSA week 3. Here are suggestions for the peas and beets many of you will receive this week. This is a whole-pod variety of peas. They can be eaten raw or lightly cooked in any number of ways -- Google offers lots of options. The conventional way to handle beets is to roast them and peel them, but these beets are so young that they really don't have to be peeled. I usually wash them, cut them into half-inch cubes, and sautee them with onion and garlic for 15 minutes. I also chop the greens and add them to the pan for three or four minutes at the end.
