The Zucchini Days of Summer

The zucchini continue to flow! Enjoy them sauteed or grilled or raw! The smaller ones are most sweet and tender. Sometimes zucchini squash get oversized, then they are Baking Zucchini, delicious shredded and baked into zucchini bread or zucchini-crusted pizza.

Enjoy this recipe from The Moosewood Cookbook for zucchini-crusted pizza: http://blog.houseinthewoods.com/2011/06/27/zucchini-crusted-pizza/ (link in plain text below) It is so good, more like a crispy flat quiche, we don’t even put toppings on it. I haven’t made it without cheese, but I might try.

FARM HANDS FUN

We enjoyed planting sweet potato plants (called slips) with some of you! Watch the sea of vines fill their space over the next couple months. See what we are up to when you pick up, there is always something to learn about the food you are eating and how it is grown.

WHAT'S GROWING ON

We launched into summer crops early and strong! The cucumbers go bonkers for a few weeks and we are in it. Our zucchini could feed all of Urbana. Our zucchini is called Lebanese Squash, a light green zucchini that holds its size better than the dark green and has a thinner skin.

Broccoli! These beauties are well-timed to harvest in June before summer pest pressure peaks. Yet still, break the florets apart and soak in a bowl of salted water to remove any green caterpillars (buggers). Tolerate and be grateful your vegs are not sprayed. Enjoy the greens now, they are prime in May and June and again in fall.

Try Kohlrabi raw! or lightly sauteed. Popular in Europe, it is sweet like the stem of broccoli.
