Dating myself a bit here, but lets see how many of you can sing along with me here:
"Come and listen to my story about a man named Jed
A poor mountaineer, barely kept his family fed,
And then one day he was shootin at some food,
And up through the ground come a bubblin crude.
Oil that is, black gold, Texas tea."
While we don't have oil on the farm, for an organic farmer, we have the very best next thing...an artesian well. Fresh, clean, cool water coming from deep underneath the ground bubbling up into our irrigation lines and back through into everything we grow. It's incredible.
What exactly is an artesian well? Well simply put, An artesian well is a well that brings groundwater to the surface without pumping because it is under pressure within a body of rock and/or sediment known as an aquifer.
People ask me why don't I just draw from the canal that runs along the back of the property? No chance. I want the water that is nurturing our vegetables to be clean and crystal clear. Having it in such an abundance is a gift and is one of the things that makes this property so very special.
So as you experience a burst of water as you bite into one of our vegetables, you can know that that, that comes from the purest place possible... below the earth :-)
Enjoy.
