We are extra excited about the boxes this week! Two of our absolute favorite fall crops are making their first appearance of the season- radicchio and winter squash! These two will bring lots of flavor (and on point seasonal color) to your table.
Radicchio, also known as Italian chicory is a bitter green used in salads and some cooked dishes. Many of the well known varieties have been developed in Northern Italy and are named for the regions they come from. Radicchio grows well in our northwest climate and is winter hearty, making it a wonderful option for fresh local greens during the fall and winter months. Even if you're not a big fan of bitter greens, we encourage you to give it a try! It makes a delicious salad with fresh apple or pear and a rich creamy dressing. It's also wonderful with roasted winter squash.
You'll find Delicata winter squash in your box this week. Delicata squash has tender skin that you can cook and eat without peeling and sweet, dense flesh. Cut it into crescents and roast on the sheet pan for a perfect topping for that radicchio salad.
