Hey Everyone! I am glad you have all been enjoying our grass-fed, ground beef. You all have, in fact, collectively enjoyed almost our entire inventory of around 150 lbs! So this week I have added a few chuck steaks as a good alternative. Chuck steak is a chuck roast cut into smaller steak pieces. It is an affordable way to incorporate healthy, essential, grass-fed meat into your diet since it is almost the same price per pound as the ground. Try braising or slow cooking it, especially in a slow cooker with other veggies. For those of you who receive some this week, let me know what you think! A cow comes with more than just ground and fancy steaks, so we want to help you learn to enjoy all the different cuts, even as we experiment ourselves. Lord willing, in just a few weeks we will be butchering a large batch of chickens and will be able to offer whole birds again on a weekly basis.
