First, a reminder that there are just four weeks left of our CSA program for this season! We can't believe how fast it is wrapping up, and this warm weather has us wondering if frost is coming. I'm sure it is, though, and once it cools down in central Oregon, it usually cools down quick! That said, if you're sad to see your CSA share subscription go, you will have an option to extend at least a couple weeks if you wish. We'll be listing inventory for on demand shares after the program ends, for as long as we've got enough variety to offer boxes! We'll make sure to remind you when this time gets closer.
Pork Boxes- Wow! We're so excited to see so much demand for add-on pork boxes. So much in fact, that we've completely wiped out Apricus' inventory for the moment. Apricus Farm is waiting to pick up their next harvest from the butcher. We're hoping to have a fresh inventory of pork boxes for pickup on 10/6, but it's possible we'll have to wait another week. We'll keep you posted.
Veggies- last week we harvested our winter squash, and we're so excited for a decent harvest! Winter Squash is quite challenging to grow in this climate, since it hates frost and takes such a long time to mature. But this was a good year, and because of that we've got squash to share with everyone! This week we're offering Red Kuri Squash in boxes, in two manageable sizes: small (2-3lbs) and medium (3-4lbs). Red Kuri is great in soups and pies due to it's dry, creamy texture, and you can even eat it's fairly thin skin, if you want to avoid peeling. This squash will keep well on your counter for 3-4 months, so no rush if you want to save it for later.
If you're excited about squash though, this week's box is perfect to make one of my favorites- Squash and Leek Risotto. I use Joshua McFadden's recipe in his Six Seasons cookbook, but here's a similar one if it isn't on your shelf!
We also want to offer one last week of Snacking Cucumbers- at a special price for members only! Last week we had a weird blip in our cucumber growth and some of the cukes we sent out were smaller than we'd hoped for. We guarantee these ones to be full sized and delicious, grab one if you wished you had more last week!
