Little Gems, Celeriac + Delicata Squash

With just three weeks left of our fall CSA share, we're excited to bring you beautiful Red Little Gem lettuces and everyone's favorite squash-- Delicata.  And important reminder-- Fill Your Pantry Bulk Market is THIS SATURDAY!  We'd love to see you at the Deschutes County Fairgrounds from 11am-3pm.  And also remember that our CSA members get 10% off at our market booth, so don't forget to remind us that you're a member for an extra deal on top of our already discounted bulk produce as a thank you for being such a faithful local food supporter!  Bring a wagon, stroller, wheelbarrow or cart if you have one, it's a heavy shopping day.

I'm in the mood for a hearty fall salad right now so I offer you this Roasted Squash Salad with Parmesan-Peppercorn Dressing from one of my favorite food blogs to spark your inspiration for this week.  I love all the cozy fall food this time of year, but it's always nice to mix it up with something fresh in between and roasted Delicata offers both a creamy and starchy balance to something green.  Feel free to sub in little gem lettuce if you don't still have that kale from last week laying around, but if you do, this is your sign to use it up!

We've got all sorts of fresh and stored roots for you this week, celeriac, turnips and carrots.  We structure our fall boxes to stock you up, so don't feel like you have to use all these roots this week.  All of our loose roots will store for months in the right conditions, we like to pop them into a reused plastic bag to keep them crisp.  In my opinion, the crisper drawer is a myth that only works well enough to be temporary.  All my fall roots live in plastic inside my crisper drawer and keep for months as long as they aren't too wet-- that creates mold and mush.  Here's a handy guide that we love to give our Fill Your Pantry shoppers for best success storing roots for as long as possible.  

Celeriac has become one of my favorite winter veggies, though I know not everyone knows what to do with it.  My favorite ways to use it are to sub it in place of celery to start any soup for the same flavor but extra creaminess, and in Celeriac Mashed Potatoes.  

We also have a last flight of gorgeous fresh radishes coming out of our greenhouse this week which will also keep well in plastic for a shorter time-- just pop the greens off to maximize storage longevity.  Any greens attached to roots will continue to try and live, pulling water out of your roots and making them soft and floppy eventually.

Finally, we've got one more round of beautiful bok choy for you for an easy side or stir fry veggie for you this week, or maybe for a comforting soup.
