The day has finally come, our CSA season is beginning! Crops are growing splendidly, and we're finally seeing more diversity come off the farm again after a long winter of seeing green.
We've got some tender spring greens for you, along with the best radishes of the season this week. Radishes are fantastic in the springtime because they're more mild and creamy than those that grow in the hot weather. I know some folks love that spicy, crunchy bite; but for those of you that are a little unsure, I highly encourage you to cook them. We've been eating radishes sautéed with other veggies on pasta, and rice multiple times a week. They're so juicy and delicious, the first flavor of something that isn't green that we've had in a while. I've also got a great recipe on our website for buttered radishes on toast with eggs, made to take your breakfast to a whole new level!
Another thing that is in peak form this time of year is bok choy, which also doesn't always fall into everyone's normal cooking repertoire. Again, though, best time of year to eat it so give it a try! Bok Choy is a great side sautéed with a little soy sauce and garlic. The stems are so succulent, adding a juicy burst to any dish.
