Kohlrabi will be ready to harvest very soon and we always get asked what is a kohlrabi? Is it a root crop? What family is it in? Once we tasted and started growing it we became a kohlrabi fan. The kohlrabi (German for cabbage turnip) though not a root vegetable at all is in the brassica family along with cabbage, kale, and broccoli to name a few. Many say it taste somewhere between cabbage and broccoli stems but sweeter. It bulb and greens can be eaten raw, roasted, pureed in soup or shredded and added to fritters or coleslaw. It is packed full antioxidants, such as vitamin C, B6, good source of potassium and fiber. To prep Kohlrabi bulb simply peel tough outermost layer of the bulb and slice, dice or shred depending on dishes you will use it in. My favorite way is raw or roasted.
We are in week 4 of our Fall CSA and feeling really blessed to have such wonderful families in this session.
