The weather has been ideal for greens this past week - warm days, cool nights and just the right amount of rain. We have an abundance of beautiful crops right now, like spinach, kale and lettuce mix, and though they're usually celebrated in salads or as sides, why not try them in fun breakfast dishes like this chickpea, spinach and chorizo frittata or these cheesy kale scones? This time of year is when these leafy beauties are at their best, so be sure to stock up while you have a chance. We took full advantage of the break from the previous week's heatwave to plant out our entire crops of watermelon and winter squash. We spent time weeding and tending to the carrots and when it rained, we trellised cucumber vines in the hoop house and seeded a whole variety of seasonal and successional plants in the shelter of the greenhouse. June is a month of dreams and what a beautiful one it's turning out to be!
