We're so excited about cucumber and pepper season on the farm right now. In between being overwhelmed by long harvest lists, and hustling to get them finished, I am constantly amazed at all the food that we have this time of year.
This week we've got some new items for you- pickling cucumbers (along with a slicing cucumber alternative), and some peppers to add some spice into your life.
We love eating these pickling cucumbers as snacks or in salad- just wash off the little spines and slice away, no need to peel! But I also love to make jars of fresh refrigerator pickles this time of year, which are the crispiest, best pickles ever! Here's a simple recipe if you want to give it a try.
As far as the peppers go, Poblanos are a little more mild and Anaheims lean toward a medium spice, but we love to add them into any Mexican dishes or stir fries we might be making. If you're feeling fancy, though, you can't go wrong with a good chile relleno, use either pepper for this one!
