Well, folks, we've made it to Abundance Season. This is a share that truly celebrates the fruits and flavors of summer. Newbies in boxes this week include Strawberries and Sweet Peppers!
I know sometimes people get tired of summer squash in August, but that's not the case at our house. I just keep finding new great ways to eat it, and I want to share a couple of my favorites with you as I implore you to please keep the squash in your box this week. We've got all three plantings of squash on right now, and it's probably going to produce even more in the heat this week. We're about to remove the oldest one, but for now our supply is heavy, and now is the time to enjoy it!
One of my fave zucchini recipes, that is on the menu for the week, is zucchini fritters. I wish we had cilantro in boxes to go with it, but parsley would be great here too! (Our cilantro germination has been subpar in the heat), and everything else you need is available this week!
Another way new to me, that my mother in-law (and fabulous farm helper) made for us this weekend, is this summer squash casserole. So good, not soggy at all, cheesey, bread-crumbey deliciousness.
In addition to the standard box options this week, we've got double basil bunches available as a swap in for our pesto special price. Now is a great time to freeze your pesto for winter, or even just freeze your basil leaves whole for cooking, with this method that I'm planning to try this year. We'll have plentiful basil for the next month, but after that we run the risk of frost, so don't delay, preserve some now and you won't regret it.
