We are excited to add green garlic to our list for shares this week. Our green garlic is planted with so much love and dedication, in late October the year before. We use all of our small garlic cloves that don't make the cut for growing full heads and plant them super close together for an early garlic treat in the spring. It's saving grace is it's incredible cold hardiness so that we can grow it outside all winter and have it ready for harvest now.
Green garlic is to garlic as a scallion is to an onion. You can pretty much enjoy the whole plant at this stage! Green garlic has a milder flavor and is great sauteed pretty much any way you'd use garlic, so feel free to plug it in to anything you're making this week, but if you really want to cherish it, I'd recommend this simple pasta so you can enjoy it's lovely flavor and texture fully!
Apart from that, we've got greens and roots on repeat this week to fill you bellies with those fresh spring flavors (that are admittedly limited in variety, but good enough to eat on a weekly basis).
