Crisp mornings and sunny afternoons make the farm days a treat right now. The crew definitely groans after hour 6 of tomato harvest a few days a week, but we all know the change is coming. Speaking of tomatoes, Kate (one of the farm's leaders) wanted me to encourage everyone to learn to love Aunt Ruby tomato. If you order heirloom tomatoes and get a squat, green tomato with a yellowish bottom, that's one of our favorite heirlooms called Aunt Ruby. It's got an amazing sweet/tart balance and a silky texture. The other day I chunked it and added it on top of pesto pasta and loved the sweetness it added. And the beauty. Some folks are confused because it's a green tomato, but it's fully ripe when green, soft, with some yellow and pink tones.
A note about Prairie Fruits Farm cheeses: as they days shorten and the does begin to reduce production, PFF will begin mixing more cow's milk into their cheeses. They sourcing their cow's milk from a dairy called Rocky Road. They are a small farm located in Mulberry Illinois raising grass-fed Brown Swiss cows on certified organic ground.
