Potato season is finally here! We want to spotlight and thank our amazing farm partners at Mink Meadow Farm in Etna, NH who grow gorgeous produce including garlic, eggplant, and now potatoes and leeks for your Root 5 CSA Shares. Our dear friends Seth and Sarah (who fell in love while tending the fields at Root Cinco) share a passion for soil, farm work, and community. Officially gaining Organic certification this year, Mink Meadow Farm is a dream come true for this next generation of incredibly hard working farmers who are continuing to cultivate the land which has been in Seth's family for 40 years!
Tips and Tricks: Fennel Spotlight
Did you know? All parts of the fennel plant are edible - from seed to flower to frond to bulb! The bulb itself is a crisp vegetable that can be sautéed, stewed, braised, grilled, or eaten raw. It's delicious licorice flavor makes it perfect for adding crunch and pizzaz to salads.
Fennel will last up to two weeks when stored in a refrigerator crisper drawer. To maintain optimal flavor, use as soon as possible
Pro Tip: Use the feathery tops as an herb in salads or for a decorative garnish on top of your meal!
