Frolicking among the kale in our hoop house on sunny afternoons is one of the great joys of vegetable farming in late November. The surrounding landscape has turned muted shades of brown and grey and all plant life has gone dormant, but inside our unheated hoop houses these hardy greens are thriving. They have the impressive ability to withstand below freezing temperatures as long as the sun warms up the houses during the day so we can harvest.
The kale, collards, spinach, cabbage, parsley, and lettuce mix featured in this weeks shares are all standouts, wowing us with their noticeable winter sweet flavor, and feeling like a power house of nutrition after indulging in sweets and rich food over the holiday. It always feels like such a magical gift to still be harvesting and eating greens this time of year.
