Everyone on the farm was feeling pretty soggy with all of the rain last week, but we're hopeful that the old adage about April showers will ring true for May flowers. And spring greens, too! It's that time of year when leafy greens are tender and abundant, which we revel in by making big, lush green salads with chickpeas and radishes and simple frittatas with fresh herbs. After a long winter of eating heavy comfort foods, it feels so good to have fresh greens on the table again.
Speaking of fresh herbs - have you tried chopping your fresh herbs right into your salads or adding them to vinaigrettes? They bring vibrant new flavors, and it's a great way to use up herb bunches (stems and all!) before your next box is delivered.
