The last week of April was grey and drizzly, but we're hopeful that the old adage about early showers will ring true for May flowers. And spring greens, too! It's that time of year when leafy greens are tender and abundant, which we revel in by making big, lush green salads with micro greens, chickpeas and radishes, and simple frittatas with fresh herbs. After a long winter of eating heavy comfort foods, it feels so good to have fresh greens on the table again.
Speaking of fresh herbs - these aromatic beauties are also abundant this time of year! Have you tried chopping tangy lemon sorrel right into your salad or adding spicy chives to vinaigrettes?
