Keep It Simple

Posted on July 17th, 2024 by Farm Manager

Thank you so much to all who came out to our potluck last week! Despite thunderstorm warnings, the weather held and it was such a joy to spend time walking the farm, swapping recipes and stories, and eating all the beautiful and nourishing food that was crafted with care. If you haven't been able to attend yet, we're having one more this summer - join us on Wednesday, August 14th from 4:30-6:30pm!

We're entering high summer and oh, the bounty! This week you'll find juicy yellow peaches and blueberries, plump summer squash and zucchini, ripe slicing tomatoes and bunches of basil that are large enough for batches of pesto. We have an abundance of cucumbers right now, too, so we're also offering bulk cucumber orders this week! What does one do with so many cucumbers, you may ask? One of our crew members, Adam, introduced us to Cucumber Agua Fresca and we haven't been able to stop drinking it since. You simply blend cucumbers, lime juice, fresh herbs and a sweetener of choice, strain and voila! - a simple, delicious and hydrating drink for these hot summer days!

Simple is the key word here. We love cooking more complicated meals in the winter, but in the heat of summer with so much going on, it's the quick, fresh, and simple dishes that win out every time. We're on the tomato toast train right now - a meal of buttered toast topped with sliced tomatoes. And another simple dish? Salad with chopped scallions, cherry tomatoes, fresh chevre and salad dressing. If you can make it within a few minutes and eat it by the river, we're all in!

Enjoy!
