We're so excited to finally have enough cherry tomatoes and eggplant to share with you all. It takes all of our tomato plants in full production to be able to fill enough pints for all our members, and that day has finally come thanks to some beautiful August weather. I'm even more thrilled to have cherry tomatoes and eggplant available in the same week because I have a favorite easy summer recipe to share with you all. This sheet pan ratatouille recipe is super flexible with whatever summer veg you have on hand, and it's an easy throw together meal that can be paired with pasta, polenta or toast. It's my favorite celebration of summer when I'm hungry and tired from the endless harvest and is even better with some cherry tomatoes instead of or in addition to regular tomatoes. It's also a great way to use zucchini, which is great because squashes are still coming in in droves on our farm.
We've also got more delicious cucumbers for you this week. Much like the zucchini, this is the season to savor them. I guess it's the week for Feasting at Home, because they also have my favorite recipe for an Asian Cucumber Salad, which is on my menu for this week. I love their nutty, savory dressing paired with crunchy cucumbers in this simple salad, and is a great way to use scallions as well.
We're busy on the farm planting crops for fall right now, in between harvesting all of these summer crops. I've been reaching for easy, rehydrating meals as I try to find energy to savor the season properly before it's gone. Luckily summer fruits make it easy to eat well with minimal effort, which is a little seasonal magic that I cherish this time of year.
