What to do with a huge excess of cherry tomatoes? This year we over-estimated the amount we would need and on top of that the plants have been healthy and producing a LOT! What to do with them all? Well we found an amazing way to make use of them the last couple of years. It simply involves cleaning them (take the calyx off) and mix them with a couple sprigs of rosemary and a few cloves of garlic cut up coarsely. Then we roast them until they are wrinkled and a little brown. We then freeze it in freezer bags or yogurt containers. This makes the most amazing sauce or side dish in the winter months! We have put a "mix" together with all the ingredients you need to do this yourself!
This week we have sweet corn from Pfennings available again. We also have Bartlett pears and variety of apples available from Great Lakes Farms (not organically grown but as local as it gets! - note we will get organic apples and pears from Pfennings once available). New this week is spaghetti squash from Our Fields farm just south of Aylmer, Ontario.
