It's peak harvest time on the farm, so it's a great time to stock up for winter! Make a big batch of tomato sauce, or salsa, or simply freeze sliced up raw tomatoes. We've got 15 lb boxes that you can purchase to jump start your salsa and tomato sauce endeavors.
Our lettuces took a hard hit with the July rains so we have a gap right now, but our spinach, baby kale, tatsoi, and arugula are all abundant and beautiful, so it's a great time to try out a new recipe and get creative with your weekly salad fixings.
We will soon be retiring our cucumber plants and our summer squash patch. It's been a long run with decent yields this summer, but the harvest is winding down, so stock up while supplies last! It's always a bit of a relief when the zucchini plants are finally mowed. They're prolific, nutritious, and you can bake them into cake, but like a new puppy, they are scratchy and high maintenance! There's no break with harvest- even on the weekends! If we leave the farm we'd need to hire a zucchini sitter! Get your summer squash now or forever hold your peas.
This week we brought in almost 8,000 lbs of storage onions!! We grew a beautiful crop this year, the onions loved all the rain in July, and now our challenge is to cure and store them for the long term so we can enjoy this staple crop all winter long.
And we picked the first watermelons! The crew enjoyed a brief reprieve from the harvest heat with these refreshing, juicy snacks!
