It's curious and wonderful how holidays accrue certain types of food. Turkey was a "last resort" food for the Indians in New England - but at that point, the settlers were just thankful to be eating at all. Halloween has its candy (why?), and Easter has its eggs (because chickens start to lay lay lay like crazy right around Easter time, during the resurrection of all green things, after winter).
St. Patrick's day has green clothes and corned beef. What goes well with corned beef?

Enjoy the sunshine! We sure are. The snow is melting fast, out at the farm, and soon the fresh green grass will be rising. Anticipating Spring, we have butterflies in our stomachs... soon the butterflies will be flying about and pollinating our profuse wildflowers!
